It is in this oasis of purity, peace and beauty that the artisanal transformation techniques, the experience in the sector for over 60 years and the high quality of the raw materials, once again meet to evoke past times and dairy products made of antique taste, as it once was, only with Italian milk, hand-wrapped and in limited quantities.
The methods of processing and transformation of the past, made of long waits, patience, mozzarella taken care of one by one and hand-wrapped in the paper, as they were used to do in the 60s and 70s.
Italian milk “straw and hay”
The milk we use for this production comes from stables that let free cows graze during the summer eating fresh grass and flowers from the meadows, while in winter they are fed mainly with straw and hay (thus avoiding the use of silage, soybeans and GMO feed), just as Nature would like.

Our production site is just 150 meters from the Rio Freddo water sources, captured in the heart of the Matese park: pure, light, low in mineral content, it is in fact recognized among the best waters in Italy and certified by the “Acqua dal Molise. “
